Tom Kha Tofu

Tom Kha Tofu combines the benefits of vegetables and tofu with the delight of the traditional Thai soup. Cherish the vegan friendly Jain version of this nutritionally balanced meal with a touch of Thai cuisine.

Ingredients

  • 8 cubes tofu sauted
  • 1 medium zucchini chopped
  • 6 fresh basil leaves
  • 4 cups light coconut milk
  • 2 cups vegetable broth
  • ½ cup broccoli florets
  • ½ cup red bell-pepper thin sliced
  • 2 tbsp red chilli powder
  • 2 tbsp coriander powder
  • 2 tbsp soy sauce
  • 2 tbsp lemon zest
  • 1 tbsp brown sugar
  • salt to taste
  • pepper to taste

Instructions

  1. Boil vegetable broth and coconut milk in a saucepan over medium heat.
  2. Add lemon zest and simmer for ten minutes.
  3. Add all the remaining ingredients except tofu cubes to this mixture. Let this simmer and cook for ten minutes.
  4. Add tofu to this mixture. Cook for three minutes more or until the tofu gets thoroughly heated.
  5. Serve and relish this delicious and hot Tom Kha Tofu
