Ingredients

  • 1⁄2 cup soaked basmati rice
  • 1⁄4 cup dill suva leaves
  • 1⁄4 cup chopped coriander
  • 1⁄2 cup chopped tomatoes
  • 2 tablespoons olive oil
  • 1⁄4 cup finely chopped capsicum
  • 1 tablespoon cinnamon powder
  • 2 tablespoons cumin powder
  • 1⁄4 tablespoon garam masala
  • salt to taste
  • 1⁄4 cup mint pudina leaves
  • 2-3 cucumbers
  • 1⁄2 cup tomato puree
  • 1-2 tablespoons red chilli powder
  • 1 tablespoon sugar
  • Water as required

Instructions

  1. To prepare the stuffing, mix the soaked basmati rice, dill leaves, coriander, 1⁄4 cup of chopped tomatoes, 1 tablespoon olive oil, capsicum, 1⁄2 tablespoon cinnamon powder, cumin powder, garam masala, salt, mint leaves in a bowl.
  2. Horizontally cut the cucumbers into two halves and scoop out its pulp. Stuff the mixture in these sliced cucumbers.
  3. In a pan, heat 1 tablespoon olive oil and add the remaining chopped tomatoes and tomato puree. Sauté it for a few minutes.
  4. Add 1⁄2 tablespoon cinnamon powder, red chilli powder, sugar and salt.
  5. Subsequently, add the stuffed cucumbers and the extra stuffing.
  6. Cover the pan and allow the mixture to cook for twenty minutes.
  7. Serve hot.
