Ratatouille Ratatouille Relish the traditional French classic dish Ratatouille with the sweetness of Guava Apple Crisp. Print Ingredients 2 zucchinis diced 1 bell pepper diced (shimla marchu) 2 cups tomatoes diced 1 small bunch basil leaves chopped (tulsi) 1 small bunch parsley leaves chopped 1 & 1/4 cups cottage cheese paneer 1/4 cup olive oil salt black pepper powder dried herbs 3 tsp oil Instructions Heat olive oil in a deep sauce pan. Add zucchini and bell pepper. Cook for 2 minutes. Add tomatoes, parsley and basil leaves. Sprinkle black pepper and salt to taste. Stir well. Cover the pan and simmer the mixture for about 10 minutes until all the ingredients are cooked thoroughly. Combine dried herbs, salt and pepper in a shallow dish. Cut cottage cheese lengthwise into 4 slices and brush it with little oil. Coat it with the seasoned mixture of herbs, salt and pepper. Heat a heavy iron skillet on medium heat. Pour 2 teaspoons of oil on it. Add cottage cheese slices and cook until browned and crisp on both sides. The Ratatouille is now ready to be served. Spoon some Ratatouille on a serving platter and place the grilled cottage cheese over it.
