Ingredients

  • 4 tablespoons olive oil
  • 1 tablespoon Harissa paste
  • 1 cup red green and yellow capsicum pieces
  • 1 cup chopped zucchini
  • 1 cup chopped pumpkin
  • 1 cup boiled chickpeas
  • 1⁄4 teaspoon cinnamon powder
  • 1⁄4 teaspoon cloves powder
  • 1 teaspoon mixed herbs
  • salt to taste
  • water as per need
  • 1 tablespoon parsley
  • 1 teaspoon lemon juice

Instructions

  1. Take olive oil in a pan. Add capsicum, zucchini and pumpkin. Sauté them for 3-4 min.
  2. Add Harissa paste.
  3. Add boiled chickpeas, cinnamon powder, cloves powder, mixed herbs and salt.
  4. Add little water and mash the chickpeas a little bit. Let it simmer for some time.
  5. Add parsley and lemon juice.
  6. It is ready to be served.
  7. This stew can be served with steamed rice.
